The brilliant red flowers of NZ’s native Southern Rata tree are a well-known sight around the West Coast of New Zealand. They are in fact related to both Manuka and Kanuka trees too. The honey from Rata is beautifully white, rich, buttery, and tastes like no other. It’s a little bit sweet and a little bit salty, lolling around on your tongue like nature’s version of salted caramel.
